I practice minimal intervention winemaking with all of the wines I make. These grapes were harvested and brought directly to the winery to be pressed onto dry ice. After settling the juice, it was gravity racked to a naturally cool fermentation that lasted for 19 days. After fermentation, it was immediately racked to stainless steel drums and sulfured to inhibit malolactic fermentation. It aged in stainless steel for 6 months before being bottled.

These grapes were harvested on the night of August 28, 2022. They were brought directly to the winery and gently pressed before sunrise. The cool juice was moved to a stainless steel tank where native fermentation began three days later. The wine was cold crashed and racked before bottling was done by hand. No sulfur or fining agents were added at any stage during the production. It was aged in bottle for 4 months before being released without disgorgement.

Elevage: 100% neutral French oak barrels a mix of used Syrah, Pinot Noir and Chardonnay barrels
This wine was a completely new project for me; I loved the idea of a 200% skin contact red wine. The resulting wine was a lower alcohol, softer, more savory product.
I practice minimal intervention winemaking with all the wines that I produce. After gently pressing some whole cluster Gamay for my BLANC, I took those leftover stems and grapes and added more destemmed Gamay on top. The fermentation was done in open-top bins and pressed after 22 days of skin contact. It was then racked to a mix of neutral French Oak 225-liter barrels for aging. Following malolactic fermentation it was sulfured minimally and adjusted slightly before bottling.

I practice minimal intervention winemaking with all of the wines I produce. This wine was cold-soaked for 3 days before spontaneously fermenting. It was 50% whole cluster fermented in open-top bins for 17 days before being pressed to stainless steel. It was then racked to a mix of neutral French Oak 225-liter barrels for aging. Following malolactic fermentation it was sulfured minimally and adjusted slightly before bottling.
